Summer Eats

Yesterday was a brilliant day here, it was mid twenties with a cool breeze, perfect conditions... I love that fluttery feeling you first get when you can sense summer coming- you anticipate it for so long and to finally feel the warmth on your skin is just divine! 

So sticking to the summer theme, I made a couple of deliciously refreshing drinks / eats yesterday that I thought I would share with you all.

Firstly- an "everything in the fridge green smoothie"


Ingredients;
1 banana 
2 strawberries 
1 kiwi fruit 
1 orange 
1/2 mango 
Handful of spinach
Teaspoon of chia seeds
1 cup of water
Handful of ice 

It's pretty straight forward- chop it all up and blend away. And it was so fricken good!
I also bought this Christmas themed tumbler at the supermarket a few days ago for next to nothing and it is PERFECT for smoothies, I realise I'm getting into the spirit a bit early but man, I really love Xmas. And it has a built in snow globe, how can you go wrong?

This mix made up two full tumblers, so you could definitely half it for one serving. 
But luckily my partner in crime digs the smoothies just as much as me;



As I said in my last post, lately, I've had bruschetta on my mind. Good old classic tomato/basil/garlic bruschetta. It literally screams summer and tastes like an explosion of flavour orgasms in your mouth. And not to toot my own horn, but I consider myself to be quite the bruschetta connoisseur... I feel like after years of testing I've mastered the tomato/basil/garlic ratio, which is actually harder than one might think.

So here's my classic bruschetta recipe;


Ingredients;
1 French stick
Basil 
2 tomatoes 
1 fat garlic clove or 2 small cloves
Olive oil
Hummus 

Serves; 2-4 people. 

Preheat the oven to 180, or 160 fan forced. All you need to do is slice up the French stick into circles, not too thin. Then use a basting brush to lather both sides of each piece of bread in olive oil, put them on an oven tray and chuck them in the oven for approx 10 mins. Keep checking on them though because some ovens are much hotter than others and you don't want them to burn. Next, chop up the tomatoes into small cubes and finely chop your garlic clove, mix these together in a bowl with a splash of olive oil. Add in a handful of basil leaves, torn if they're really big.


Then all you need to do is make sure the bread is golden and crispy, get some hummus ready and start eating!! This batch was delicious, but far too much for just an entrée so we actually just ended up having this for dinner.. So easy to prepare and so incredibly good, give it a try this summer as either an entrée or, if you make enough like I did, just have it as a main! 



Voila! That's it folks! Such simple ingredients but such a perfect dish.
